Marshmallow Crispy Squares

I do a lot of ironing for my husband every week ( the kids and I  just wear wrinkled clothes!). I don’t enjoy ironing much, but it is the perfect excuse to watch some TV! I haven’t seen the Pioneer Woman TV show for a while and the DVR was full, so last week I decided it was time! My 3-year-old loves to watch with me. When he saw this recipe he wanted to go out and buy some marshmallows right away! I tweaked it a little to fit our tastes (2 whole bags of marshmallows in this thing was too much!). The recipe is super-easy and very similar to regular rice crispy squares.

Marshmallow Squares

4 Tablespoons Butter

1 10-ounce bag regular size Marshmallows

1/4 teaspoon Salt

6 cups Rice Krispy (or similar) Cereal

1/2 (or more) bag mini Marshmallows

Rainbow Sprinkles

 

Melt butter on medium-low heat in a pan on the stove top. Add regular-sized marshmallows and melt. Stir in salt. Remove from heat and fold in cereal. Add mini marshmallows and gently stir in. Place in a greased 9 X 13 inch pan and press flat. Top with sprinkles.

Pioneer Woman Experiment – Blackberry Cobbler

I don’t have the best picture of this recipe because my husband ate half of this (by himself!) in one sitting before I remembered to take a photo! He especially like this with ice cream. I used frozen blackberries in mine, but I am going to try it with other fruits too.

This recipe was good and is in the keeper file! 

One of my favorite things about this dessert is the short ingredient list. This one has just 5 ingredients - milk, butter, sugar, self-rising flour and blackberries.  I was a bit alarmed at pouring 1/4 a cup of sugar over the top of this thing in addition to the 1 C. already in the batter, but it wasn’t overly sweet . (Though I don’t want to know how many calories this thing has! It can count as a fruit, right?)

Pioneer Woman Cooking Experiment – Macaroni & Cheese

I’m a day late posting this like I promised – I hope you weren’t counting!

You know who the Pioneer Woman is right? Most people do. She’s author of a wildly successful cooking and lifestyle blog, city-girl turned ranch wife and host of her own Food Network cooking show.  Her recipes and ranch life intrigue me , so I had to try some of her recipes.

Experiment 1 : Macaroni & Cheese

I feel like I am on a life long search for the perfect mac & cheese. My kids and husband like the kind with Velveeta ,  but I want to find a recipe that just uses whole food ingredients – no processed cheese.  I have a slow cooker mac & cheese that I really like, but I want a creamy macaroni recipe too.

I was excited to try this one because it just uses ingredients like milk, eggs, butter and cheddar cheese.

The Results:

My kids didn’t like the taste at all. I thought it was a little bland, but that may have been because I didn’t have the dry mustard the recipe called for. I give this recipe a B. I’m going to try it again and add the dry mustard, but if it still tastes bland, I’ll keep looking. I do think that this recipe is worth trying. My husband ate a lot.
