I tried this recipe last week and though it wasn’t pretty , it was pretty good. My husband is one of those meat-and-potato kind of guys, so this fit the bill. I adapted the recipe from one of my favorite blogs, Amy’s Finer Things. Check it out there.
- 1 lb hamburger
- 3/4 C. sour cream
- 2 T. melted butter
- 1/2 C. milk
- 4 C. diced baked potatoes (about 4-6 potatoes)
- 1 tsp. salt
- 2 C. shredded cheddar cheese
Bake the potatoes and cool (works great to make them with supper the night before and then refrigerate). Dice potatoes with or without skin ( I peeled mine). Brown hamburger and onion.
In a bowl mix sour cream, butter, milk, salt and 1 C. of cheese. Add the potatoes and hamburger to the mix and place in a greased 9×13 pan. ( I halved the recipe and used an 8×8 pan). Bake at 350 for 30-40 minutes until lightly browned.
